Synergic Antioxidant Effects of the Essential Oil Component ?-Terpinene on High-Temperature Oil Oxidation

The synergic antioxidant activity of ?-terpinene with ?-tocopherol, its synthetic analogue 2,2,5,7,8-pentamethyl-6-chromanol (PMHC), BHT, TBHQ, and catechol was studied by measuring the O2 uptake hydroperoxide formation in stripped sunflower oil at 130 °C. Although inactive when used alone, it prolonged, a concentration-dependent manner, protecting ?-tocopherol PMHC, while had no effect on catechol. Mechanistic studies performed alkylnitroxides hydroxy-TEMPO acetamido-TEMPO, as molecular probes, suggested that generates hydroperoxyl (HOO•) radicals, are responsible for reduction tocopheroxyl radical H atom transfer. Experiments commercial showed able to prolong induction time due endogenous tocopherols, demonstrating this terpene is promising natural food applications high temperature.
